The Flying Biscuit Is Landing in Huntersville

The Flying Biscuit Is Landing in Huntersville

Here’s some news worth getting up early for. David and Jimmy Mumby have signed a franchise agreement to bring The Flying Biscuit Café to Huntersville, North Carolina.

The agreement covers one café. Site selection is underway, and the address and opening date will be announced once a lease is signed. So no, we can’t tell you where to park yet. Soon.

They didn’t discover the brand. They’ve been eating here for years.

David and Jimmy have been regulars at the Park Road Shopping Center café for a long time — long enough that signing the paperwork felt less like a career pivot and more like a logical next step.

“We chose Flying Biscuit because we believe it’s the best in its class, and we’ve always loved the food, personality, and welcoming atmosphere of the brand,” they said. “We’re excited to combine our love of breakfast and brunch with our professional experience to bring a place to Huntersville and the greater Lake Norman community where people can enjoy great food and drinks, gather with family and friends, and feel at home.”

The team behind it

David is a CPA with a background in accounting and finance, and a UNC Charlotte grad. Jimmy is a PMP whose career runs through project management, real estate, and facilities — Davidson College. Between them, the numbers and the buildout are covered.

And they’re not doing it alone. David’s mom, Denise, will be in the café day to day. She brings more than 20 years in food and hospitality, including 12 years managing a fast-food breakfast concept. Which is to say: someone in this operation has already worked a 6 a.m. rush, and it shows in how they talk about it.

Why Huntersville

Huntersville and the greater Lake Norman area have grown fast — families, professionals, and a whole lot of people who plan their weekends around where to eat. The Mumbys are raising their family in the area; their son attends Woods Montessori. They’re building this for their own neighbors, which tends to change how carefully you do it.

What guests can expect

Breakfast and brunch, served all day, until the doors close at 3. No dinner service, no pretending otherwise.

That means Creamy Dreamy Grits whenever you want them, not just when the clock says you’re allowed. Omelets, Love Cakes, stuffed French toast, a fried green tomato or two. Biscuits baked all morning, with too much butter — which is the right amount.

Come as you are — even that version.

What else is happening around the brand

Huntersville joins a busy year. A few of the recent ones:

  • Downtown Knoxville opened Sept. 12. Chris Compton’s second café, after he brought the brand into Tennessee at Turkey Creek in 2025. Patio, full bar, 140 seats, and a lot of downtown office workers who finally have somewhere to sit down before 8.
  • Kingsport, Tennessee. Larry and Courtney Bell, a father-and-daughter team, signed in August. They’d never heard of Flying Biscuit until they walked into one — then started asking how to get one to the Tri-Cities.
  • South Nashville. Shreya Patel signed in September as a full-time owner-operator, the brand’s second commitment in the Nashville metro this year.
  • McDonough, Georgia. Keisha Carter is bringing a café to Henry County, one of the fastest-growing counties in the state, and one where brunch demand has outrun the supply.
  • Magnolia, Texas. Mitchell and Heather Wagner signed a two-unit agreement in August for Magnolia and one more market in greater Houston.
  • St. Charles, Missouri. The first Missouri café is targeting a Q4 opening — the brand’s first step outside the Southeast-and-Texas corridor.

Founded in Candler Park, Atlanta in 1993, The Flying Biscuit Café now has 44 cafés open and 12 in development.

Where the Mumbys hope to go

One café first, done right. Longer term, David and Jimmy have said they’d like to own and operate three to five cafés around Charlotte within five years, and they’ve mentioned an interest in introducing Asheville to the brand someday. No territory beyond the current agreement has been awarded.

That’s usually how it starts, though. One café, then people start asking when you’re coming to their side of town.

The quick version:

  • Who: David and Jimmy Mumby, with Denise Mumby in operations
  • Where: Huntersville, NC, in the greater Lake Norman area
  • What: The Flying Biscuit Café — all-day breakfast, brunch, and lunch, open until 3 p.m.
  • Status: Franchise agreement signed for one café; site selection underway

Want to do what the Mumbys did?

The Flying Biscuit has been doing this since 1993, from Candler Park to 44 cafés across the Southeast, Texas, and now Missouri. We’re not filling in a map — we’re picking partners who already love the place.
