Big news out of Montgomery County: The Flying Biscuit Café is coming to Magnolia.
The brand has signed a two-unit franchise agreement with Mitchell and Heather Wagner — a husband-and-wife team opening in Magnolia first, with a second café to follow somewhere else in the greater Houston area. Addresses and opening dates are still being sorted out and will be announced separately.
Meet the Wagners
Mitchell Wagner served in the U.S. Army, then earned his degree from Texas State University. After that came 27 years leading sales and operations for two of the largest retailers in the country — businesses doing more than $100 million a year, teams of more than 300 people. Heather Wagner joins him as business partner.
They both grew up in small Texas towns. That part matters as much as the résumé.
Why Magnolia
Because they got married there. At The Meekermark, to be exact, and they’ve wanted to put down roots in town ever since.
Magnolia is one of the fastest-growing towns in the Houston area and still feels like a hometown — which is the exact combination that pulled the Wagners in.
“We chose Flying Biscuit because it’s more than a restaurant, it’s a place where community comes together over great food and genuine hospitality. Magnolia already holds a special place in our hearts; we were married at The Meekermark here, and we’ve dreamed of putting down roots in this town ever since. Having both grown up in small towns in Texas, we know firsthand how much a place to gather means to a community, and we can’t wait to give Magnolia a spot where families and friends can create memories of their own.” — Mitchell Wagner, Franchise Owner, The Flying Biscuit Café – Magnolia
The plan is built around the people already there: local families, schools and youth sports teams, churches. And as a veteran himself, Mitchell intends to connect with area first responders, active military, and fellow veterans.
What Magnolia gets to eat
The menu the brand built its name on. Biscuits baked all morning, with too much cranberry apple butter — which is the right amount. Stuffed French toast. Award-winning shrimp and Creamy Dreamy Grits. Omelets, vegan scrambles, burgers, wraps.
Breakfast and lunch only. No dinner, no exceptions, so plan your day accordingly. Hours for Magnolia will go out closer to opening.
What’s next in Texas
The current agreement covers two cafés in the greater Houston area, starting with Magnolia. The Wagners have also mentioned interest in New Caney and College Station somewhere down the road, though nothing beyond the two units has been awarded yet.

Texas has room, and so does the rest of the Southeast. Half of Flying Biscuit’s franchisees have gone on to open a second or third store — this isn’t about filling in a map, it’s about finding the right operators for the right towns.
