Right now, The Flying Biscuit Café in Magnolia, Texas is mostly studs, dust, and a really good idea.
Construction is underway at 5667 FM 1488, Suite D, in the Magnolia Village center. Walls are framed. The floor plan you’ll eventually argue about — booth or table? — exists on paper and is starting to exist in real life. Franchise partners Mitchell and Heather Wagner have been out there watching it happen.

The site was chosen on purpose
FM 1488 is Magnolia’s main commercial corridor. The Wagners wanted a spot people drive past every single day, surrounded by businesses that have been here a while — not a destination you have to schedule.
“We want Flying Biscuit to become part of people’s routines,” Mitchell said.
That’s a specific kind of ambition. Not the busiest restaurant in town. The usual one.
Who’s building it
Mitchell and Heather aren’t new to Magnolia. They were married at The Meekermark, a few minutes from the front door. Both grew up in small Texas towns, so neither of them needs a slide deck to explain why a town needs a place to sit down together.
Mitchell served in the U.S. Army, earned his degree from Texas State University, and spent 27 years running sales and operations for two of the country’s largest retailers — businesses over $100 million, teams of 300-plus. He knows what a bad Saturday rush looks like from the inside. This one will be his.
The Wagners first found Flying Biscuit on a trip to Charlotte. They came for breakfast and stayed for the room.
What’s going in behind those walls
Breakfast and lunch, daily. Doors close at 3 p.m. That’s been the model for more than 30 years, since the first café opened in Candler Park in Atlanta.
Biscuits baked from scratch all morning, with an amount of butter we’d rather not discuss in writing. Shrimp & Grits. Southern cooking that leans bold instead of safe. Kids eat free Monday through Thursday. Live music out on the patio once the weather cooperates, plus a few things the Wagners are sitting on until opening gets closer.
Who they want in those chairs
The list is long and local: parents building a Sunday morning habit, youth sports teams after a game, churches, local schools, the Magnolia Chamber of Commerce, the shop owners a few doors down. Mitchell’s a veteran, so first responders, active military, and fellow veterans are near the top of it.
Longer term, the Wagners are looking at up to five cafés, with New Caney and College Station on the short list. Magnolia comes first, and it gets built right.
