The Flying Biscuit Café has signed a franchise agreement to open its first café in Katy, Texas. The people building it are Mario and Ifeoma Harper — a Houston-area couple who have been eating at our Memorial City café for years.
So this isn’t a brand parachuting into a new market. It’s two regulars deciding they’d rather be on the other side of the counter.
Katy fills in the map
Flying Biscuit already runs five cafés around Houston: Memorial City, East Downtown, Kingwood, Richmond, and Cypress. Katy sits right in the gap — Richmond to the south, Cypress to the north, and one of the fastest-growing communities in the Houston metro in between.
Same weekend routines. Same families ordering the same thing they always order. Just closer to home for a whole lot of people in Katy.
Who’s building it
Mario Harper is an attorney and entrepreneur, with a background in supply chain, small business investment, and real estate. Ifeoma Harper spent 25 years in commercial banking, advising middle-market and corporate clients on capital strategy and growth.
They looked at several concepts before signing. Two things decided it: the strength of the support structure behind the brand, and the fact that the opportunity was sitting in their own backyard.
“We chose Flying Biscuit because it’s a truly special breakfast concept — those fluffy biscuits and bold, comforting flavors that people genuinely come back for,” said Mario Harper. “We’re most excited to bring that warm, satisfying experience to Katy and make it a neighborhood favorite — a go-to spot for brunch on the weekend and breakfast the rest of the week.”
That’s a local reading the room correctly.
What’s on the table
Breakfast, brunch, and lunch. Doors close in the afternoon — there’s no dinner service, and there never has been.
The menu runs Southern-inspired without getting precious about it: stuffed French toast, the shrimp and grits people drive for, hearty omelets, vegan scrambles, burgers, wraps. Biscuits with too much cranberry apple butter, which is the right amount. Many locations also pour a full bar, including mimosa flights and a Bloody Mary named the Stage 5 Clinger.
When does the Katy Flying Biscuit open?
No site yet. The Harpers are working with the Flying Biscuit development team on real estate in the Katy area, and the location and opening timeline get announced once a lease is signed.
Which is our polite way of saying: don’t start lining up.
The bigger picture
Flying Biscuit started in Atlanta’s Candler Park in 1993. Today it’s 43 cafés open and 11 in development across Georgia, Alabama, Tennessee, South Carolina, North Carolina, Florida, Texas, and Missouri, serving tens of thousands of biscuits a week and catering events on top of that.
Katy is one more neighborhood on that list — and the next one comes from someone who already loved the place before they owned one.
