Rudra isn’t your average restaurateur. He is currently a fourth-year Biological Engineering student at the University of Georgia (Class of 2026). When he’s not at the café, he’s working as a Research Assistant in a Bioprocessing Lab, utilizing machine learning to optimize renewable energy systems.
You might wonder how an engineer ends up in the kitchen. For Rudra, it’s all about the science of success. Whether he’s analyzing datasets in a lab or ensuring the perfect rise on our signature biscuits, Rudra applies the same level of precision, optimization, and dedication to everything he touches.
A Family Tradition of Service
While the Tallahassee location marks Rudra’s first venture into full-service dining, hospitality is a family tradition. The Patel family owns and operates several successful Subway locations, providing Rudra with a lifetime of experience in high-standard operations and community engagement.
By combining his family’s “pro-operator” discipline with his own innovative engineering mindset, Rudra is bringing a fresh, data-driven, and highly energetic approach to the Tallahassee brunch scene.
