Big news out of Music City: The Flying Biscuit Café just signed its first-ever franchise agreement in Nashville, Tennessee. And the person behind it already has her sights set on more than one location.

Meet the Owner-Operator
Patel isn’t new to running a restaurant. She spent years in supply chain management, and has five years of restaurant ownership and management experience. She’ll be a full-time owner-operator at her Flying Biscuit, which means she’s the one who’ll actually be behind the counter greeting the regulars.
She found the brand through business partners who’d come across Flying Biscuit while running restaurants in another market. She stayed connected to it after relocating to Nashville. What sealed it for Patel was the operating model as much as the food: breakfast and lunch only, doors close in the afternoon, no dinner rush and no late-night shift to staff. Turns out “get home before dark” is a pretty compelling business plan.
Why South Nashville
This isn’t a random pin on the map. South Nashville has been growing fast — GEODIS Park, the Nashville Fairgrounds, AJ Capital Partners’ 18-acre Wedgewood Village development, and a new 4,400-seat Live Nation venue opening this fall. Additionally, Vanderbilt and Belmont sit just up the road, too.
Add it up and you get a neighborhood full of students, young professionals, and people who work nearby and need a solid breakfast plan. That’s exactly who Patel’s building for.
“We chose Flying Biscuit because we wanted to bring a fun, welcoming brunch experience to the Nashville community, especially the vibrant area around Vanderbilt and the surrounding corporate community,” Patel said. “We’re excited to create a place where students, professionals, families, and friends can come together over great food and make it their go-to neighborhood spot.”
First in Nashville, Third in Tennessee
This café will be Flying Biscuit’s first location in Nashville and its third in the state, joining cafés already open in Knoxville and Kingsport.
“Shreya and her team are targeting the South Nashville Proper trade area, which continues to show strong growth and aligns well with the brand’s daytime, community-focused model,” said Andrew Scherzer, partner and director of franchise development for Flying Biscuit Franchising.
What’s Actually on the Menu
When the doors open, expect the lineup Flying Biscuit’s known for — all-day breakfast, the shrimp and creamy dreamy grits, stuffed French toast, omelets, vegan scrambles, burgers, and wraps, served morning through the lunch hour. Fair warning on the grits: they’re worth rearranging your morning for.

Patel’s already thinking past café number one — she’s hoping to open as many as three Flying Biscuit locations over time. She’ll be in good company: the brand now has 43 locations open and 13 more in development across Georgia, Alabama, Tennessee, South Carolina, North Carolina, Florida, Texas, and Missouri, with new markets signing regularly.
An address and opening date will be announced once the lease is signed. Until then, South Nashville — get your fork ready.
