Gateway to the North: Flying Biscuit Café is Coming to St. Louis!

We have always said that Southern hospitality knows no borders, and today, we are proving it. We are beyond thrilled to announce a historic milestone for our brand: The Flying Biscuit Café is officially heading to St. Louis, Missouri!

This isn’t just a new location; it’s a major leap forward as we sign our first-ever agreement north of the Mason-Dixon line.

Meet the Team Leading the Charge

An expansion this big requires a powerhouse team, and we’ve found exactly that in our newest franchisees: Latrell Hayes, Kennon (Kip) Barber, and Randy Barnes.

This trio isn’t new to the world of high-level restaurant operations. Latrell and Kennon are seasoned pros in the Jersey Mike’s system, where they currently own and operate three highly successful locations. They’ve built a reputation for fostering high-performing teams, maintaining a strong internal culture, and practicing rock-solid operational discipline.

Now, alongside Randy Barnes, they are bringing that expertise to the Flying Biscuit family with a Multi-Store Agreement to develop the St. Louis market.

Why St. Louis?

St. Louis is a city with a legendary food scene—from its famous BBQ to its vibrant brunch culture. We knew it was the perfect place to plant our flag as we move into the Midwest.

Latrell, Kip, and Randy have already made their mission clear: they plan to take the operational excellence they’ve mastered elsewhere and elevate it even further with Flying Biscuit. Their goal is to make these new locations the gold standard for breakfast and brunch in the Gateway City.

Breaking New Ground (Literally!)

For years, the Flying Biscuit Café has been a staple of the Southeast. By crossing the Mason-Dixon line, we are opening a new chapter for the brand. We are excited to show our new friends in Missouri why people wait in line for our:

  • Iconic Fluffy Biscuits (served with our signature cranberry apple butter)
  • Award-Winning Creamy Dreamy Grits
  • Famous Southern Comfort Food with a modern, “Flying Biscuit” twist

What to Expect

With a multi-store agreement in place, St. Louis can expect several locations to pop up in the coming years. Our team is currently working with Latrell, Kip, and Randy to identify the best neighborhoods to introduce the “Flying Biscuit vibe.”
